Charcuterie (pron.: /ʃɑrˌktəˈr/ or /ʃɑrˈktəri/; French: [ʃaʁ.kyt.ʁi], from chair 'flesh' and cuit 'cooked') is the branch of cooking devoted to prepared meat products, such as bacon, ham, sausage, terrines, galantines, pâtés, and confit, primarily from pork.[1] Charcuterie is part of the garde manger chef's repertoire. Originally intended as a way to preserve meat before the advent of refrigeration, they are prepared today for their flavors derived from the preservation processes.[2]

GRAPEFRUIT!
The folks in Mexico know all about it.  They add it to Tequila and call it a Paloma.  It has surpassed the Margarita as the trendiest drink south of the border.
 
Pour some kosher salt on a plate. Rub half of rim of a highball glass with a grapefruit wedge; dip rim of glass in salt. Combine 1/4 cup fresh grapefruit juice, 1 tablespoon fresh lime juice, and 1 teaspoon sugar in glass; stir until sugar is dissolved. Stir in 1/4 cup mescal or tequila, add ice, and top off with 1/4 cup club soda. Garnish with grapefruit wedge.
